As every year, a highlight of this event is the Bénichon mustard competition. On saturday, the candidates compete in two categories: amateur and professional.
The jury, composed of members of the Confrérie des Maîtres moustardiers, tastes and nominates the winners. Sweet and sour jams, which are inseparable from the Bénichon meal, are all part of the trade secret. Everyone has their own recipe, passed on under the seal of family secrecy and skilfully refined and improved over the generations. Taste, texture and consistency are three aspects judged by the Master Moustardiers. At the end of the tastings, the most subtle preparation is named the best Bénichon mustard in the canton of Fribourg.
Note that only the top 3 results in the professional category are published.
The public can also judge the mustards at noon.
